MOM'S HOLLANDAISE SAUCE

Artichokes & Hollandaise just like my mom makes. Artichokes are one of my absolute favorite vegetables, and this is my #1 way to eat them. This Hollandaise is super easy to put together as long as you make sure to slowly stream in the butter. By slow I mean starting with a drop or two to start then gradually adding more when the aioli begins to emulsify.

What you’ll need:

🥚2 egg yolks 

🍋1 tbsp lemon juice 

🧂Pinch of salt

🧈1 stick of unsalted butter, melted 

What you’ll do:

Add yolks, lemon juice and salt to a food processor and pulse until combined. Put the food processor on low and slowly stream in the melted butter, starting with a drop or two at a time. Gradually add more as the aioli begins to emulsify and come together. Once all the butter has been slowly added, check for consistency and seasoning of the aioli. Add more lemon if you like it a little more acidic. I prefer to use this for dipping artichokes but use it for fries, eggs Benedict,  or potatoes 😋
