Caramelized Zucchini & Goat Cheese Tortelloni

You’ve made an excellent decision for dinner this evening, please see below for cooking instructions.

Bring a large saucepan of water to a boil. Salt the water (around ½tbsp per 4 cups). This adds depth of flavor to your pasta as it’s cooking.

  1. Cook the pasta in the boiling water for 3-4 minutes. Stir regularly to prevent sticking. The tortelloni will float to the top when they’re ready but try one first to make sure it is your perfect texture before removing.

  2. While the pasta cooks, add a tbsp of the pasta water into a sauce pan and turn on medium heat. Add half the butter & let melt into the water, stirring gently. Gently heat until steaming (don’t simmer your butter or it will break) and then turn off the heat.

  3. Lift the pasta out of the water and transfer to the butter sauce. Toss gently to coat. Add more butter if desired.

  4. Divide into serving bowls, sprinkle with parmigiano and add a little freshly cracked pepper. Buon appetito!
