Nachos alla Potatoes

If you’re just here for the pasta, my apologies. I’ve been on a cook everything else but pasta kick lately. Please forgive me! 😎

There is so much wrong with what I’m about to say but also so much right..I’m calling these Nachos alla Potatoes. If you’re someone who can’t have tortilla chips for whatever reason or maybe you’re like me and just didn’t feel like going to the store..this is a wonderful substitute. I already can’t wait for these leftovers with some fried eggs and toast at breakfast tomorrow.

8 small white potatoes
Salt/pepper
3 tbsp Roasted garlic oil
1/2 jalepeno, diced
1/2 white onion, sliced
8-10 cherry tomatoes, quartered
1/2 cup feta cheese
Salsa of choice
Scallions and cilantro, rough chopped
Some pickled onions (see previous reel for recipe!)

Pre-heat oven to 375. Boil potatoes with salt until fork tender. Strain and carefully mash with the back of a spoon so they become smashed. Add some salt, pepper and 3 tablespoons of garlic oil, or whatever floats your boat. Mix that together and add to the jalapeños, tomato and onions. Mix until combined and add to a pan so it forms one layer. Roast at 375 for 10 minutes. Add feta and broil for a couple minutes until you get some nice color on the cheese and veggies. Make sure to keep an eye as to not let it burn! Carefully take it out of the oven and add your toppings of scallion, cilantro, pickled onions, and whatever else floats your boat!
