BUTTERY MUSHROOM SAUCE

  • 1/2# mushrooms of choice, sliced

  • 1 small onion, diced

  • 2 cloves garlic, sliced thin

  • 1 teaspoon salt

  • 4 tablespoons butter

  • 1/2 cup milk of choice

Heat pan on medium heat and add butter. Once melted, add mushrooms, onion, and garlic. Add salt to help sweat down the veggies. Cook until onions become translucent and mushrooms are soft. You should still be able to see some melted butter but if not, add another tablespoon. You can add a 1/2 cup of cream, oat milk, or milk add this point and simmer until sauce begins to bubble and thicken, 3 minutes or so. If you are cooking pasta, add a 1/2 cup of the pasta water and bring to a simmer. Add your par cooked pasta to pan and finish cooking in the sauce. Taste throughout for seasoning.
