MUSHROOM & GOAT CHEESE RAVIOLI FILLING

  • 1# mushrooms of choice, sliced

  • 1/4 cup goat cheese

  • 1/2 cup parm, grated

  • 2 shallots, small dice

  • 2 cloves garlic, chopped

  • 1/2 tablespoon thyme (fresh or dry)

  • 1/2 tablespoon oregano (fresh or dry)

  • 1 teaspoon salt

  • 1 tablespoon butter or olive oil

Sauté mushrooms in butter or oil until both sides are browned and cooked through. Take off heat, add the oregano and thyme. put aside and allow to cool completely. Cook shallots and garlic on medium heat until translucent and cooked through. Add a little salt here to sweat. Pull off heat and allow to cool completely. Once cool, add shallots, onions, cheeses and mushrooms to food processor. blend until thick and creamy. Adjust with salt and pepper here. Refrigerate until ready to use.
