DAD’S TOMATO SAUCE

Yields about 4 cups, or 10 servings.

  • 3 tablespoons butter

  • 1 red onion white onion, diced

  • 4 cloves of garlic, minced 

  • 2 sprigs of thyme, cleaned and chopped

  • 2 sprigs oregano, cleaned and chopped 

  • 3.5 # fresh tomatoes, diced or 3.5 canned crushed tomatoes (2, 28oz cans)

  • 1 cup tomato paste

  • Salt + pepper

Melt butter in medium sized pot on medium-hight heat. Add chopped onion. Add a bit of salt here to help the onions sweat. Once they become soft and aromatic, add minced garlic and cook for 2 minutes until fragrant. Add the tomato paste. Add tomatoes once the tomato paste has released most of its oils - usually 5 minutes or so. Continue stirring throughout so the paste does not scorch. Add in your chopped herbs. Lower heat and allow the sauce to simmer - stirring throughout. Continue to taste throughout the cooking process. Add more salt, pepper, and herbs when you feel necessary.
